BBQ Salmon over Pasta in a Creamy Parmesan Sauce

Heat oven to 400 degrees. Wash de-skinned salmon portions, sprinkle with salt and pepper and glaze with your choice of BBQ sauce. Place on a foil lined baking sheet (hello zero clean-up :)) and in a preheated oven. Bake for 20 minutes. If you like, you can switch your setting to broil for the last minutes to really sear the sauce on top.

In the meantime, set a pot of water to boil for the pasta. At the same time, melt butter in a medium skillet or a heavy-bottomed dutch oven over medium heat, add garlic and onion powder and heavy cream. Bring to a boil, reduce heat and simmer for about 7 minutes.

Pasta water should be boiling. Drop pasta in the boiling water and cook according to box directions. Drain, but don't rinse with cold water! That will cool the pasta too much. Also, the starch in pasta will further thicken your sauce.

Add shredded zucchini, parmesan cheese and nutmeg to the sauce. Stir and simmer for another 2 minutes to melt the cheese. Add the drained pasta, stir to combine and cook additional 1 minute.

Plate the pasta and top with the salmon.

For those days when you are absolutely slammed. Under half hour, start to finish. If you are REALLY short on time, use jarred alfredo sauce. That way you only need about 5 minutes for prep and 5 minutes to heat the sauce and cook the pasta. I have actually managed to take a shower and wash my hair while the salmon is in the oven. My husband thinks that he has been be-witched. All he sees me do is come home from work, go to take a shower and suddenly – I step out of the shower and dinner in on the table! I will be sure to make this dinner once I have a fussy newborn on my hands. Enjoy everyone and let me know how you use your freed up time.
